Peel the butternut squash and cut into larger cubes. Cut bacon into slices.
Put the bacon into a pan on medium-high heat and cook for 1-2 minutes before bacon gets brown.
Reduce heat to medium, add butternut squash and nutmeg. Mix well, cover the pan and cook for 7-8 minutes until the squash is tender. Stir occasionally.
Put the squash and bacon mix into a paper towel to soak up the grease.
Pour olive oil, vinegar, salt & pepper into a glass and whisk with a fork until it's well combined.
Put the arugula on your plates or in a bowl, add the farro and squash-bacon mix, and pour vinaigrette over it.
